One of my favourite drinks when the holidays approach is eggnog. Unfortunately for us Brits, it is not as readily available as in the States where you can buy the delicious beverage in a milk carton! So, to honour my American connections I have decided to share with you all a recipe for eggnog so everyone can get in the festive spirit…YUM!

Ingredients
12 eggs, separated 6 cups (1.4L) milk 2 cups (470ml) heavy cream 2 cups (470ml) bourbon 1.5 cups (340g) sugar 0.75 cups ( 175ml) brandy 2 tsp ground nutmeg (freshly grated is even better)Method
1. In a large bowl, beat the egg yolks together with the sugar for approx 10 mins (the mixture should be firm and the colour of butter)
2. Very slowly, add in the bourbon and brandy – a little at a time
3. When all the bourbon and brandy has been added, allow the mixture to cool in the fridge for up to 6 hours
4. 30 minutes before you wish to drink – stir the milk into the chilled yolk mixture and stir in the nutmeg
5. in a separate bowl, beat the cream until it forms stiff peaks
6. in yet another bowl, beat the egg whites until they form stiff peaks
7. gently fold the egg white mixture into the egg yolk mixture, then gently fold the cream into this
8. after ladling into cups, garnish with another pinch of freshly grated nutmeg et voila! – a delicious festive beverage
